Food fermentation is the process by which natural bacteria feed on carbohydrates creating lactic acid. In addition, this bacteria is the good kind that strengthens your immune and aids your digestive system. This process is known as Lacto-fermentation. It preserves food and breaks it down in a manner that the body finds easy to process. Plus, preserving foods this way also increases the availability of nutrients. As well as enzymes, omega acids, and certain good bacteria. It also results in interesting flavors, textures, aromas, and smells. Finally, the overall benefits are not only limited to your immune system or your digestive system. But they contribute to your overall wellness. Some of the benefits of fermented foods are:

  • An excellent source of nutrients
  • A clean system

  • Besides, fermented foods can be stored in the refrigerator for weeks compared to fresh produce which only lasts a couple of days and they contain more probiotics.

How to Ferment Foods

Fermenting food is a fairly simple process but it does require some attention to detail. With our key tips you will be fermenting like a pro in next to no time.

You will need:

Ingredient selection:

This is a very important step in the fermentation process. Your ingredients determine your end product so always go for fresh ingredients. In the case of fruit and vegetables check for any spoils before purchasing them and whenever possible go for organic produce. These should be thoroughly washed at all times to avoid bad bacteria developing during the fermentation process.

Getting started

This depends on the food that is being prepared. Some food recipes such as Kombucha need a starter culture to get the process going. Most vegetables just need salt or a combination of whey and salt depending on personal preference and the recipe being used.

Equipment

Since the fermentation process is basically bacteria converting food from one state to another, you want to ensure that only good bacteria will come into contact with the food. All equipment that will be used for fermentation should be thoroughly cleaned (sterilised where necessary) to avoid contamination. Once the fermented food is transferred to jars ensure that they are tightly sealed before refrigerating.

When is it ready?

There is no real formula to be able to know when your fermented food is ready. It depends on what you are fermenting and how you prefer your fermented food to taste. Some people like it mild, others average and others strong. There are however things that you can look out for such as a change in the smell and the formation of bubbles. On average a good ferment takes an estimate of 3-7 days to be ready but this depends on factors such the preexisting bacteria, the temperature in your kitchen and the produce that you have selected.

Storage

The best way to store fermented foods is to refrigerate. The cold air will slow down the fermentation process, allowing you to preserve your foods for months.
